  1. Remember when you were a kid (you may do this with your own kids now) and your mom was making cookies and she gave you the beater of goodness? All of that yummy cookie dough just waiting to be licked! My sister and I fought over those ALOT, but, thank heavens there were two beaters!

    Anyhoo, this recipe I made today brought back that memory – and I haven’t even tasted the final product. This is a FABULOUS healthy treat from elena’s pantry. Original recipe:

    When I was mixing the goodies with my hands, I was taken back to when I was 5, waiting in the kitchen for Mom to hand over the goods. In the situation this morning, after I mixed all of the goods and pressed it into the pan, my hands were transformed into blenders and I licked every one of my fingers. It’s that good.

    What I changed about the recipe:
    added more coconut oil
    no stevia (didn’t have any)
    added more vanilla
    added pecans
    added dates
    will drizzle chocolate – not cover the top with it (against Fuzz’s wishes)

  2. Ok, so these have been a hit! Took a sampling to the gym, thank you Kels and Mike H for tasting! I LOVE them, but that’s because they aren’t too sweet and they are ultra satisfying…if you want them sweeter, add more chocolate, maybe the actual chips in the bars, add additional agave and stevia… but, all in all, I will make this again. Can’t wait to try them on the grandbaby, I think he’ll love them.
