Stuffed Acorn Squash

Well, this is another ‘kitchen sink’ type post. Great weeknight recipe, great to do with your family or just your spouse…also easy enough to do by yourself!

  • Pick a ground meat: turkey, pork, chicken, etc. Tonight, I used chicken-apple sausage.
  • One diced onion
  • some garlic
  • carrots
  • zucc/spin/ anything you want.
  • Spices: what ever you want: salt and pepper to taste, we added rosemary, thyme, sage. 

saute the onion and garlic, add the sausage, and other veggies cook through but don’t over do. 

Cut the squash in half, seed, and put a bit of olive oil or grape seed oil in a dish. Place squash in dish, stuff full of meat mix, and bake at 375 for 55 minutes. Depending on how large your squash is, you may need to leave the dish in longer, just test the squash after 50 or so minutes.

This was EASY and I can’t wait for dinner!ImageImage
