Whole 30 Day 21 – Countdown Officially Begins

Wow. I’m wrapping up Day 21 on the Whole30. I’m pretty stoked. I cheated a bit last night with our good friend’s paella. I was NOT going to pass that up – you can’t. It would be wrong.

What was the cheat? Rice and white beans. That was about 1 cup total, then on top of that I had scallops, clams, chicken thighs, veggies, pesto slaw (will post that one soon) and other awesomeness.

It tasted amazing…seriously, do not regret that one bit. Neil is the paella MASTER. For my 40th in Hawaii, I wanted that for my birthday dinner. The man brought his paella pan, spices, etc. so he could do that for me. THANK YOU NEILIO. I cannot say ENOUGH about his paella…nor can I say enough about his amazing sous chef, Michele. So why am I telling you this? Well, I felt a bit odd today. I slept well last night, however, today – today I was SO TIRED I physically couldn’t keep my eyes open.  Seriously – I couldn’t function I was so tired. On the way up to Hemlock I napped and on the way back down. I could NOT believe how fatigued I was.

I am trying to put the pieces together as to WHY I was so tired today. I have done nothing too out of the ordinary this weekend. My husband, well, that’s another story with his awesome landscaping project. Pictures below. I ran errands, cooked, cleaned, etc., but other than the food thing, I can’t pinpoint anything. I didn’t even get too much sun. I was JUST freaking tired…

Anyway, wanted to share. I’m almost through the 30. Funny thing – I am ‘running’ (we’ll see how much of a 50K I can run) a 50 K in October and I already plan on doing the Whole 30+ (instead of 4 weeks, going to 6+) before the race. I love the way I feel…so we’ll see how ‘bad’ I get when this is done on April 9. 🙂

Coconut Power Bars

I have this recipe in the oven right now and I AM EXCITED.  The last couple of days have been odd – I’ve been craving something sweet. I’m not a ‘sweets’ type person. I don’t go for Reeses PNB Cups…although as I was putting Hudsie’s Easter Egg goodies together I ALMOST caved. I didn’t – but I sure thought about it. That actually would have been too sweet – way too sweet.

My type of sweetness level is a bit of coconut oil in half a date with an almond. That’s getting too sweet for me almost now that I’m on Day 22 of the Whole30. Anyhoo, I was looking for a recipe that incorporated more coconut and less almond…I’ve been OD’ing on the almond flour, etc., lately. I got this idea from Paleo Diet Lifestyle, a great resource.

I went ahead and put my own spin on it, wanting flax meal in there and more coconut flour. That’s just how I’m rolling lately. These have no sugar in them, I omitted the honey and vanilla. I think they’d be better with those items included, but for now, with only 8 days to go, I’m not giving in.

Ingredients

  • 3 eggs;
  • 1 cup canned coconut milk;
  • 1/2 cup + a wee bit coconut oil;
  • 1/3 cup almond flour;
  • 4 tbsp flax meal;
  • 4 tbsp coconut flour;
  • 1 1/2 cups unsweetened shredded coconut;
  • 1/4 tsp sea salt;

Preparation

  1. Preheat your oven to 350 F.
  2. Using a stand or a hand mixer, combine the eggs, coconut milk, and coconut oil.
  3. Combine the almond flour, coconut flour and flax meal in a small bowl.
  4. Set your mixer to the lowest speed and slowly add the flour mix.
  5. Once mixed, add the shredded coconut.
  6. Continue mixing just until there is no clumping and the coconut mixture is consistent throughout.
  7. Pour the mixture into an 8×8 baking dish and cook for 30 minutes, or until golden around edges.
  8. Once through, remove from the oven and allow to completely cool. Cut into squares and keep them refrigerated until serving.

Spicy Apple Pulled Pork

Made this for Easter dinner and it was nummy! I love pulled pork because its easy and good and you can make enough for 8 people with a crockpot. Love that.

I used a rub I whipped together for our chickens when we smoke them – turns out, it’s just as good on pulled pork.

Ingredients:

Feeds at least 6-8 adults.

  • Crock Pot
  • 2 pkgs of pork tenderloin (you get the two packs from costco – this was the only pork I had in my fridge, so used it. This will work on your normal pulled pork cuts)
  • 2 white onions, sliced thin
  • 2 granny smith apples, sliced thin
  • 2 cans of stewed tomatoes
  • 1 can of tomato sauce (note, I think you’d be just fine using all stewed or all sauce – your call. I loved the consistency of this combo)
  • 4-6 cloves garlic

RUB: On the rub, don’t be shy. Use it at least half of it, save whatever you don’t use in an air tight container.

  • 1 tbsp dried parsley
  • 1 tbsp cumin
  • 1 tbsp allspice
  • 1 tbsp coriander
  • 1 tbsp ground ginger
  • 1 tbsp ground red pepper
  • 1 tbsp paprika
  • 1 tbsp black pepper
  • 1 tbsp salt

How to:

  1. Take the rub and rub a dub dub on your pork. Don’t be shy! Really rub it.
  2. Take a layer of sliced onions, 2 cloves garlic, and apple and place on bottom of Crock Pot.
  3. Take some rubbed meat, place on top of goodies.
  4. Take another layer of onions, apple and garlic, place more meat on top of it.
  5. Pour tomato goodness all over, make sure all is well covered.
  6. Cook on ‘high’ setting for four hours.
  7. When the ‘high’ cook is done, switch meat around – place stuff on bottom on top, mix well, make sure sauce covers.
  8. Place on ‘low’ heat setting for 6-8 hours*.
  9. Enjoy!

*Note: I think this would be just fine on low for 8-10 hours. Just make sure, at least once, you switch the layered meat around just to make sure all gets evenly cooked.

Whole30 Day 19

WOW. Only 11 more days to go. My ‘cross the finish line’ date is April 9. Which is a good thing it’s before my good friend’s 50th bday – she would kill me if I didn’t have a glass of wine with her on this milestone birthday.

Anyhoo, I think what I have noticed largely on the Whole30 is how my sleep has improved. I LOVE SLEEP. Here’s the deal, how many articles have we read that say we need sleep. At least 8 hours. HOW MUCH are we actually getting? I was averaging 6-7. For me, that was just not enough. For the last couple of nights I’ve not gotten 8 hours (events, eating late), BUT – the sleep I have gotten has been AMAZING. The only thing that ‘feels’ tired are my eyes…just a bit dry.

This has been an awakening for me. I have been very strict outside of having heavy whipping cream in my decaf coffee last night…BOY THAT was a treat. Other than that, I’ve been on target. That in itself is an accomplishment!

I haven’t been on a scale, I haven’t taken measurements. I’m going to hop on a scale today at the gym as well as make an appointment to get my body fat measured. Last time I did that I was 18.7%. If I’m lower, awesome, if I’m not, awesome. I seriously feel really good and that’s all that really matters.

Whole30 Day 18

Wow. I’m over the half way point. Some thoughts have crept into my head, i.e. “well, isn’t two weeks enough? Having a bit of dairy won’t hurt me…what about one square of chocolate…” BUT I HAVE STAYED STRONG. I only have 12 more days. I have some social events that I’m not even concerned about. I’ve got other people who are there doing the Whole30 with me so we will band together and remain strong in our soda water drinking! I’ll have mine in a wine glass please, twist of lime…

I feel good. I slept like shit last night because I didn’t eat until close to 9, but that’s the second time that’s happened so I know exactly WHY I didn’t sleep well. More knowledge for me to take and do something with. Love learning about myself during these little experiments.

Today is 13.4 for The Open (CrossFit Games – http://games.crossfit.com/). 95lb clean and jerk/toes to bar ladder. I’m looking forward to this one because it has two moves that I like. Heavy – but I like it. I’ll have my awesome noon peeps surrounding me, going through the same pain I am. We’re in this together!

Whole30 Day 17

WOW. Over the halfway point! I’m feeling darn good. And am noticing some muscles I didn’t know I had. I feel pretty darn good – sleep is back down to 7 ish or so hours, but its a solid 7, no interruptions. I’m still looking for 8+…when I get that, I am UNSTOPPABLE. Funny how an hour can make the difference.

I’ve noticed cravings going down…which is another interesting tidbit. I’m also pretty well prepped with food, though, so I ALWAYS have a go to.

Anyhoo, just another day in paradise. 🙂

Paleo Breakfast Bars

Ok, folks, last one for the night! I am so behind. Anyhoo…

This is another great recipe from Elana’s Pantry. I modified this a bit because I find I’m eating way too much in the way of nuts. I’m starting to see it with my skin…I’m breaking out a bit more. Anyway, I wanted to cut that down so modified. ENJOY!

Ingredients

  1. In a food processor combine almond flour, flax meal, cinnamon, and salt
  2. Pulse in coconut oil, water
  3. Pulse in coconut, pumpkin seeds, sunflower seeds, and raisins
  4. Press dough into an 8 x 8 inch baking dish, wetting your hands with water to pat dough down
  5. Bake at 350° for 20 minutes [once out of the oven, you can serve…OR, go to step 6]
  6. Once cool, I poured ¼ cup of coconut oil on top, then put in the fridge. Once cool, I cut and now use as snacks. Gives a bit more texture and numminess to the bar.
