Wow. I’m wrapping up Day 21 on the Whole30. I’m pretty stoked. I cheated a bit last night with our good friend’s paella. I was NOT going to pass that up – you can’t. It would be wrong.
What was the cheat? Rice and white beans. That was about 1 cup total, then on top of that I had scallops, clams, chicken thighs, veggies, pesto slaw (will post that one soon) and other awesomeness.
It tasted amazing…seriously, do not regret that one bit. Neil is the paella MASTER. For my 40th in Hawaii, I wanted that for my birthday dinner. The man brought his paella pan, spices, etc. so he could do that for me. THANK YOU NEILIO. I cannot say ENOUGH about his paella…nor can I say enough about his amazing sous chef, Michele. So why am I telling you this? Well, I felt a bit odd today. I slept well last night, however, today – today I was SO TIRED I physically couldn’t keep my eyes open. Seriously – I couldn’t function I was so tired. On the way up to Hemlock I napped and on the way back down. I could NOT believe how fatigued I was.
I am trying to put the pieces together as to WHY I was so tired today. I have done nothing too out of the ordinary this weekend. My husband, well, that’s another story with his awesome landscaping project. Pictures below. I ran errands, cooked, cleaned, etc., but other than the food thing, I can’t pinpoint anything. I didn’t even get too much sun. I was JUST freaking tired…
Anyway, wanted to share. I’m almost through the 30. Funny thing – I am ‘running’ (we’ll see how much of a 50K I can run) a 50 K in October and I already plan on doing the Whole 30+ (instead of 4 weeks, going to 6+) before the race. I love the way I feel…so we’ll see how ‘bad’ I get when this is done on April 9. 🙂
